CHS Foods II ServSafe Students Welcome Environmental Health Specialist

 Students in Ms. Stefanie Carnathan’s Foods II class recently received a visit from Environmental Health Specialist Laura Baker. Baker spoke to the class about restaurant cleanliness and health inspections as related to the unit students were studying on “ServSafe.” She covered many topics such as the sanitizing of dishes and food surfaces, required temperatures for both cold and hot foods, food suppliers, the North Carolina Food Code, and the Employee Health Policy Agreement. She shared many of her inspection experiences with the class.


Ms. Carnathan said, “For the past 2 months, students have been learning about ServSafe which is a national certification exam that students are eligible to take. This exam demonstrates their understanding of safety and sanitation in the hospitality field. This is extremely beneficial for students who work in the restaurant industry. Most employers will give students a raise for just having this certification!”

Baker gave the students packets containing user-friendly cards to refer to when preparing and cooking food. The cards have internal cooking temperatures and information on foodborne illnesses.

“Health inspectors are not bad people!” smiled Ms. Carnathan. “They actually make friends with the employees of the restaurants where they perform inspections. They dress just like the employees dress to make them feel comfortable when she visits. Ms. Baker inspects restaurants, hospitals, schools and food trucks for Union County. There are a total of 17 food trucks in Union County. It takes about two hours to perform an inspection for each facility.”

Ms. Carnathan and the class would like to thank Ms. Baker for her informative visit.
